The roller coasters will drive you crazy
I'm not sure they can make these roller coasters anymore scary. Some of them you can just sit at the bottom and look up and be mesmerized for about 10 minutes or so. The town is great, plus all the emphasis on the express pass.

Fly Up Above Disney
They have a new ride at Downtown Disney. You go way up to experience a bird's eye view of Lake Buena Vista and Disney World with a ride aboard Characters in Flight. Yes, you catch it and go right up above Downtown Disney. It cannot fly away as the tethered balloon ride always comes down after it reaches around 400 feet.

Slip into the pool water with a beluga whale at SeaWorld Orlando. They do a really nice job with the interactive elements at this water based theme park. What a fantastic experience that is open for both children and adults to participate. They will take video of your experience, just too cool.
